Oat Bran, Dates, Walnuts & Banana Muffins 
Gluten Free, High Fibre, Low Fat

Bake for 20 to 22 mins  
Bake until toothpick comes out clean or when you press down on the centre of the muffin it springs back.

Yields 12 Large Muffins
Prepare oiled muffins tins, I like to use paper muffin cups which I spray Canola Oil Cooking Spray in.

Dry Ingredients:
Oat Bran – 3 1/4 cups
Baking Soda – 2 tsp
Walnuts  – 1/2 cup, chopped or Walnuts
Salt – 1/8 tsp
Brown Sugar – 1/4 cup 
Cinnamon Powder – to Taste

Wet Ingredients:
Ripe Bananas – 2 Mashed
Coconut Milk – 1 Cup
Sour Cream – 1/2 Cup
Coconut Oil – 2 Tbsp
Eggs – 2 large
Vanilla – 1 tsp
Dates  - 1/2 Cup chopped

Method:
1. In a Plastic or Glass bowl mashed Bananas then add the rest of Wet Ingredients. 
2. In a second bowl add all Dry Ingredients and mix well
3. Pour wet mixture into the dry mixture and mix well.
4. Spoon Muffin Batter into a greased muffin cups. 

Freeze them the Oat Bran Muffins and eat Fresh Daily, no waste.  Thaw naturally or a few seconds in the Microwave.

Ingredients:
Oat Bran – 2 1/2 cups
Baking Soda – 2 tsp
Walnuts – 1/2 cup, chopped
Milk – 1 cup
Yogurt – 1/2 cup
Oil – 2 Tbsp
Eggs – 2 large
Salt – 1/8 tsp
Brown Sugar – 1/2 cup (1/4 cup if you are watching your sugar)
Cinnamon Powder – 1 tsp
Vanilla – 1 tsp
Ripe Bananas – 2, mashed
Method:
1. In a bowl, whisk together Milk, Oil, Eggs, Yogurt, Brown Sugar, Salt, Cinnamon Powder and Vanilla.
2. Mix in mashed Bananas.
3. In a separate bowl, mix together Oat Bran, Walnuts, and Baking Soda.
4. Pour wet mixture into the dry mixture and mix well.
5. Pour batter into a muffin tray coated with oil.
6. Bake for approximately 20 – 22 minutes at 350 F (180 C) or until toothpick comes out clean when inserted into a muffin.
