Thought I would introduce myself.  This Blog is my Passion about Food and Making Healthy Choices.  Choices that allow me to still really enjoy food and have a better quality of life.  I have never been one for going on a diet.  I learned early on that to stay slim: it is about lifestyle Changes, not Diets, for me.  I know people that have spent hundreds of dollars on following a diet plan only to gain the weight back, plus more. I learned doable habits and choices that have become a part of me.   At one time in my life, I was almost 200 lbs.  I am only 5 foot 1 inch tall.  I released my weight slowly and changed my behavior. For example, night time eating was a habit that was putting on the weight and or keeping me from releasing my weight.
One day I was watching Dr. Oz, early 2000’s and he explained why I was not losing my weight.  It was like he was talking straight to me, lol.  He said that it doesn’t matter all the right things you do in a day, working out & eating right if you eat before you go to sleep.  Night time eating will undo everything good you did all day.  He also explained that the body is supposed to go into repair mode when you are sleeping.  If you eat at night your body is digesting food much slower than during the day and turns it into fat, hence not losing weight. It was like someone hit me over the head.
I decided that I would only set my sights on not eating 3 hours before I go to sleep and not worry about anything else pertaining to weight.  I made 8 pm my cut off time for food.  At first, I found it hard to go to sleep without the food.  With time the reverse happened.  When I did eat before bed I couldn’t go to sleep.  It took me a year to reprogram myself, where I was not struggling with myself anymore.  I had to start over and over.  Don’t Give Up on Giving UP.  It took me many years to create the bad behaviour and it would take time to unlearn it. Going forward I have managed to keep my weight at a manageable level.  
One bad habit at a time I made my lifestyle changes.  To the point that when I eat out I don’t even appreciate the food most times.  I think about how I could make it without all the fat and processed ingredients, plus I don't feel good after it.   For the money that it was going to cost I would eat out I could eat for days at home.
I have continued to learn about food.  I have learned how to convert recipes to make them healthy.  I didn’t really appreciate what I have learned until I started this Blog.
That being said I am not a professional.  Over the years I have learned and researched ingredients and how they work in a recipe.  The newest item I tried is the Fig Newton Cookie recipe.  It is so good and satisfying, way more than bought Fig Cookies.  I have since tried the Fig Newton recipe a second way, Part 2.  If you want to get a feel of how I work in the kitchen these two videos are a great intro of how Ronda is in the Kitchen.
