Bananas--substitute for equal amounts of fat or oil. Mash bananas first, then measure into a standard measuring cup designed for dry in- gredients. Substitution in chocolate products such as cakes or brownies works best because the banana flavor and aroma are masked by the chocolate. Bananas work well in banana bread, banana muffins, banana cookies, and spice cakes.
Bananas are sweeter than butter, so you can usually use less sugar than the recipe requires. Additionally, since you're eliminating the fat in the recipe, you should also use half the amount of eggs, or replace whole eggs with egg whites to keep your baked goods tender.
