Wet Ingredients
2 Tbsp Coconut Milk
2 Eggs Beaten
1 14 oz Can Cream Corn
Dry Ingredients
3/4 Cup Spelt Flour
3/4 Cup Oat Flour
2 tsp Baking Powder
Salt & Pepper to Taste
Method
In a bowl beat 2 Eggs and add 2 Tsp Milk.
In a Larger Bowl add all Dry Ingredients and Mix Well
Add Cream Corn & Egg Mixture
Blend Well
In a Medium PreHeated *Pan add 1/4 Cup of batter to create a Pancake. Wait for little bubbles and Flip & Brown.
